Yummy Crunch Bars

I have decided to commit to this blog and try to photograph all my creation. My good friend photographs all her masterpieces and has bugged me to do so as well. Wish me luck and here goes!

I saw the basic recipe for these cookies and decided kick them up a notch for Christmas. I decided to make a test pan of these goodies and 2 days later they are all eaten. Between my friends, family and the batch the dog stole we all really enjoyed them. My friend was coming over to borrow a baking pan and I packed up some cookies for her to sample. I left the pan and cookies on the table by the door. When I walked by a few minutes later the cookies were gone?? Everyone denied taking them so I am assuming that Charlie had a feast.

What You Need

  • 1 cup butter
  • 3/4 cup packed brown sugar
  • Premium Plus Crackers - saltines
  • 2 cups chocolate chips, I used a mix of milk, semi-sweet and milk
  • 1 cup nut (pecans or walnut or our favourite) pieces, toasted, finely chopped
  • sprinkle with chopped dried cranberries
  • **The addition of crushed candy canes is so festive and delish. The spice section at Bulkbarn has them.

Make It

HEAT oven to 375°F.

COOK butter and sugar in saucepan on medium-high heat 5 min. or until butter is melted and mixture is well blended, stirring occasionally. Bring to boil; cook 3 min. without stirring. Meanwhile, arrange crackers in single layer in foil-lined parchment pan.

SPREAD sugar mixture onto crackers.

BAKE 7 min. Immediately sprinkle with chocolate. Let stand 5 min. or until chocolate is melted; spread to cover crackers. Top with nuts, crushed candy canes & cranberries; cool completely. Break into pieces.

Halloween 2009

I just got home from the gym and decided we should carve the pumpkin. My husband chose a stencil of a dog and we carved his image. It is very windy here in Mississauga and its getting cool. I hope the kids are prepared. Wishing you all a safe and fruitful or should I say candyfull event!

Now to bake up the pumpkin seeds and I am starting to search for the perfect menu for next weekend. My friend Janet and her husband are coming over and we each like to make really nice meals and experiment with new recipes. I am thinking Beef wellington but what to serve along side???
